Almost everyone who has crossed my path in the last six weeks has been forced to try a Votemeal Cookie — which Cathy linked to on Election Day — because I am OBSESSED with the recipe and have made no less than six batches.  (It doesn’t take any forcing to get them to eat the second and third and fourth….)
As I wrote over at ffffood, they are A-MA-ZING: oaty, chewy, and chocolaty, with an unexpected spicy-tart twist (they’re glazed with apple cider vinegar, cinnamon, and a pinch  of cayenne!).

One BIG note: without even realizing it, I’ve been substituting apple cider vinegar in the glaze for apple cider.  It works very well — it’s a perfectly (subtly) tart counterbalance to the sweetness of the cookie.
