Lunch! My third favorite meal of the day. And this also happens to be my last-minute entry to Bundle’s Bring Your Lunch to Work Contest. Thanks Mike D. for the kind words and the heads-up! (No, not the Beastie Boy. Unfortunately.)
So what are we having? Glad you asked!
Greens pie with kale and Swiss chard from our garden and beet greens. I made two pies a week ago and have been happily eating them, slice by slice, for lunch and snacks. (I had beet greens because every week or so I roast and chop beets and toss ‘em in lunch salads. I don’t want to waste the tops but I don’t think they’re that great on their own. So, greens pie!)
Kale and arugula salad with sweet potato and Parmesan-Reggiano. I picked the kale and arugula last night in the rain (no need to wash!). For the past few weeks, I’ve included roasted sweet potato in many lunch salads to boost their nutritional density. The Parmesan-Reggiano, which I picked up on Arthur Avenue,  is pure indulgence. This woman, for one, cannot live by greens alone.
