Illustrated Plate
I’m a big fan of Sous Style’s new series, The Illustrated Plate, where a restaurant dish is regularly illustrated by artist Kelly Waters. This week’s dish, The Rebel Within from San Francisco’s Craftsman & Wolves, is definitely my favorite.
As soon as Annie posted this remarkable creation in early December, I knew I’d have to try it when we were in San Francisco. And of course as soon as we showed up our friends insisted on taking us there. (Wait wait is that the place with the muffin with an egg in the middle?? I asked. I’ve seen a painting of that! Yes you have, they said. Ah, Tumblr.)
It was just as good as it looks (and that’s sayin somethin).
The only question: how did they do it???
Meghan and M. (both great bakers) think they must use a combi oven, a commercial oven that cooks with steam and heat, though creating a dough that sets just as the egg does would still represent weeks of trial and error.
On a related note, San Francisco is truly the Paris of the States. Their breads and pastries are — and always have been — through the goddamn roof.
