Because you haven’t had enough food porn out of me today: the second course at Um Segredo’s recent seafood dinner. Shima Aji* sashimi with sake gel, rice crisps, and shiso. Playful textures and elegant flavors. The slivers of grape in particular were a lovely surprise (I normally dislike grapes in savory things).
* I googled so you don’t have to: Shima Aji (or shimaaji) is usually known in English as “striped jack” and is considered a sustainable sushi choice. Now ya know! Order with pride.
