My dad has his favorites at the St. Paul Farmer’s Market and chief among them is a pair of lesbian goat farmers who make cheese. One of the best — stinky, strong, unaged, and unpasteurized — is sold as “fish bait.” Strictly not intended for human consumption.

Our CSA makes its own fish bait and sells it every Tuesday evening outside the 6th Street Community Center (you don’t have to be a CSA member to buy some — they also sell raw milk, olive oil, maple syrup, etc.).
Last night we served it with new season apples and grilled peaches and pears.
‘Cause everyone knows fish love a good cheese pairing.
