I’m loving Quorn Naked Chik’n Cutlets. I broil them with olive oil, salt, and pepper and then add a sauce or eat cold atop a salad. Today for lunch I’m eating slices of Chik’n in a riot of sauteed local spring veggies (broccoli rabe, asparagus, and spinach — not local, actually) with a muffaletta tapenade-inspired sauce.
The texture of Chik’n is a bit odd. It reminds me of Chicken McNuggets — a good thing, believe it or not, because they were my favorite fast food treat as a child. Except I can actually pronounce everything that went into these.
By the way, this whole eating-meat-no-more-than-twice-a-month-and-only-if-I-know-where-it-came-from is going just swimmingly. It’s kept me from eating foods I really shouldn’t, like KFC at the Derby party. Normally I would have thought to myself, “Well, just one. It’s a special occasion!” and then I would have plowed through two drumsticks and felt gross.
And a study has found that reducing consumption of high-emission foods, particularly red meat and dairy products, is a better bet for reducing your “foodprint” than eating local. So there. Or something.
I did, of course, enjoy every bit of the lamb, etc., on Friday night. All the better for its rarity!
